The Ají Amarillo is the most common chili pepper in Peru. "Ají" means chili pepper in Spanish, and "amarillo" means yellow. In the U.S. it is commonly referred to as the "yellow chili" or "Peruvian chili". Although there is a notable berry taste that gives the Ají a wonderful and unique flavor, it is still quite hot and spicy, so use it in moderation. Use the ají in salsa, ceviche, and sauces or try it in one of the many classic Peruvian dishes, such as causa rellena and papa a la huancaína.
