Oregano is native to the Mediterranean region and popularly associated with Italian and Greek cuisine. Oregano came to prominence in the US after World War II when servicemen returning from Europe told of the wonderful pizzas experienced in Italy. Oregano goes particularly well with all types of tomato sauces but also with egg and cheese dishes. Greek oregano is an essential ingredient of pizza, just as Mexican oregano is essential to chili powder. The two types may be used interchangeably but the use of each one on its own increases the authenticity of certain dishes. It's aromatic and slightly peppery flavor is perfect in pasta dishes, with vegetables, for meat rubs, salad dressings, and breads.
