Although there are many varieties of Celery, commercial production is usually dominated by a variety known as Pascal Celery. Celery is part of the "Holy Trinity" used in Cajun cooking, along with bell-peppers and onion. It is also a primary ingredient, along with carrots and onion, in the renowned Mirepoix-base used in French cuisine. The dried flakes and stems add a wonderful concentrated flavor to many dishes.
