A fast vegetable dip perfect for a cheese board or paired with a dollop of a creamy cheese and spread on a baguette! The carrots create a rich base with a complex flavor profile and the Adobo Spice Blend adds a nice touch of orange and lemon zest.

Ingredients

1 TBS Organic Extra Virgin Olive Oil
1 TBS Vik’s Garlic Fix
2 TBS Adobo Spice Blend

From the Grocer
1 lb carrots, peeled and cut into chunks
1 TBS grated fresh ginger
2 TBS orange marmalade
2 TBS lemon juice

Preparation

MICROWAVE the carrots, covered, until soft, about 5 mins.
COMBINE carrots, ginger, marmalade, and lemon juice in a blender and process until smooth. Blend in Organic Extra Virgin Olive Oil until silky.
POUR into a container and stir in Vik’s Garlic Fix and Adobo Spice Blend. Allow flavors to meld about 15 mins.
SERVE at room temperature or chilled. For a more intense spiced flavor, cover and refrigerate overnight.
