MICROWAVE the carrots, covered, until soft, about 5 mins.
COMBINE carrots, ginger, marmalade, and lemon juice in a blender and process until smooth. Blend in Organic Extra Virgin Olive Oil until silky.
POUR into a container and stir in Vik’s Garlic Fix and Adobo Spice Blend. Allow flavors to meld about 15 mins.
SERVE at room temperature or chilled. For a more intense spiced flavor, cover and refrigerate overnight.
