Vegan Fresh Wraps

Base
6 to 8 leaves collard greens, stems trimmed
8 to 10 oz hummus
1 Tbsp Tzatziki Seasoning
1 Tbsp Shawarma Spice Blend
2 Tbsp Lemon Extra Virgin Olive Oil

Fillings
1 large bell pepper
1 large carrot
2 to 3 ea radishes
2 to 3 ea scallions
2 to 3 ea mini cucumbers
10 to 12 ea cherry tomatoes
Prep Leaves and Veggies:

Rinse collard greens and pat dry. Place one leaf on a flat surface, stem/back side up.

Using a paring knife or vegetable peeler, shave down the stems. This will make them more pliable and easier to roll.

Repeat with remaining leaves. Prep veggie fillings by shredding or slicing into thin strips.

Assemble:

Place a leaf on a flat surface with the stem end facing you.

Add 2 Tablespoons hummus to the center of the leaf. Spread evenly to approximately ½-inch from the edge.

Sprinkle 1/8 teaspoon Shawarma and ¼ teaspoon Tzatziki over the hummus. Top with an equal assortment of sliced vegetables, approximately ¾ cup in total. Drizzle with 1 teaspoon Lemon Extra Virgin Olive Oil.

Roll up tightly; wrap the leaf like a maki roll (ends open) or a burrito (ends closed). With the seam side down, cut in half.

Repeat with remaining greens and veggies.

*More filling suggestions: avocado, sprouts, asparagus, red cabbage, zucchini, pickles, chopped nuts, crumbled feta or goat cheese, pomegranate arils, fresh herbs.
